Amish Friendship Bread

I got a starter for amish friendship bread and a baked loaf of it. Its super tasty, but a bit too sweet for me to have even semi-regularly. Can I substitute the pudding for something else? I never have pudding in my house and would prefer to leave it out of the bread, but if I do, how do I adjust the recipe? Can I also just add less sugar to make it less of a cake and more of a sweet-ish bread?

    hm, using instant vanilla pudding doesnt sound very Amish to me.. could you use plain custard powder and vanilla extract? That would cut out some sugar, and try just cutting back the sugar,- at least on the second "adding of sugar".

    I guess with 10 days to cure the yeast, it needs the sugar in the beginning to stop it from going off,- and feeding the yeast so it wont die in all the wait- but I see no reason why you need all that sugar on baking day.

    On browsing the net I also read a list of variations, and one mentioned adding apple. That also might make it less sweet, if you use a nice refreshing tart kind.

    BTW: Did you know the Amish came from Switzerland originally?

      Yeah thats what I was thinking about the 'Jello Instant Pudding" (what the recipe valls for) not being very Amish.

      I'll try it when I bake it and see what happens. Where can I get custard powder? I dont know that Ive ever seen it anywhere.

        I know they sell Birds Custard powder in the USA, but I always by Lyon's in a local asian store. A lot of Thai or Indian sweets require it. I like it because you always have to add your own sweetening, be it sugar or otherwise.

        And the plain old custard it makes is yummy on apple pie :-)
