Hi all!

Let me introduce myself by telling you about my recent sourdough adventures...

I've been experimenting with sourdough for the first time recently.
Made my first starter about a month ago.

I'm glad to report that my own experiments were just as successful as some so-called "official" recipes. And it's much easier than I ever thought it would be!

The only problem was that the sourdough starter just kept growing and growing as I fed it. I began to obsess over it -- woke up every morning thinking "I must feed the colony!" and because I didn't have time to bake regularly, it got bigger and BIGGER until it seemed as though it would slip out of its container and devour the countryside, as in some kind of 50s sci-fi flick! ...yet, I felt enslaved by it, afraid that it would die if I didn't feed it every day. Was it beginning to control me?!? I had created a monster!

I finally figured out you can either throw some out, or freeze it in single-portion sizes, or keep it in the fridge to slow its growth (and only feed it once a week). Now, thankfully, the sourdough creature is under control.

I also found a zillion sourdough recipes on the good ol' internet, and was pleased to find out that you can use sourdough as leavening fro practically anything. I've made some delicious sourdough brownies, muffins and pancakes in addition to the San Francisco-style loaves that I love.

I love all kinds of baking, but it seems sourdough is my current obsession.

I'd love to hear about other creative ways to make and use sourdough from you guys.

    ah yes i remember it well. when i was in school, we had our own "barm babies". ours was named barmy miller. heh. we always removed half of it and then fed it. once we started our first sourdough, we split the barm in half. i got one and my partner in the class got one. sadly "barm-2-d-2" has gone to the great barm heaven in the sky. i just couldn't take care of it.

    i could send you some of the recipes we used at school. we had a bunch of great sourdoughs that we made. good luck with it!!!

    great story! another thing you can do to tame the creature is store it as a "chef", that is, a nugget of dough in a crock or other container full of flour (kind of nestled in the flour in the crock). i store it that way because i don't have a fridge and that way it stays un-putrid; it just dries out. then i reconstitute it and voila!

    i love sourdough rye. i often throw some rye into any sourdough loaf i'm baking, just because i love the sweet unique flavor. today i baked an all-rye sourdough, which i haven't done in a long time. of course the loaf is always dense, tart, chewy and moist--awesome for slathering with cream cheese, but not the bread you'd pick for french toast. today it came out particularly yummy.

    i just do a natural leaven. i mix my starter with rye flour and water to the consistency of a thick pancake batter. when it's ripe i double the quantity with more flour and water and let it ripen again. (this time i make it thicker in consistency, more like a thick mud.) if i want a lot of bread i'll double it again, or else i'll make the dough at this point. making the dough means adding some salt and then more flour until the dough can be kneaded. it doesn't really require much kneading, which is good because the dough is sticky. then i pop it into loaf pans and bake it.

    i just found this very interesting recipe online and think i'll try it next time i have a hankering for a strong rye loaf. you might like it too:

    in case you haven't discovered it yet, there's a fantastic book about natural leavens and sourdoughs called "the bread builders". it's my favorite bread book ever. it covers earth ovens too.

      oh you guys make me hungry!!

      I have never tried making my own sourdough.. partly because I fear I would ruin my culture,- due to irregular baking..
      how long can you store a culture without havin to resort to freezing some, or throwing any out?

      (I have visions of said 50's sci-fi B movie scenario...)

        jana you could spread it out on a parchment and dry it, then when you need it you rehydrate it and let it grow for a couple of days before you need it. It turned into a joke when i had my days off and trusted someone else at work to feed my starter, it died and died and died until finally I lost it and stuck it in the freezer. it worked out fine just leave it a bit of breathing room and freeze it in individual recipe sizes. rotate it and use it often.....

          I don't see what the concern is about. I keep mine in my fridge and when I feed it I just toss 1/2 cup in the compost and replace an equal amount with fresh water and flour...

    i have a very old sourdough starter that i only feed every week or so. if I'm not using it i just remove some before feeding. it's actually recommended that you do that every time you feed. I'm not the greatest bread baker but we love to make pancakes and waffles out of it and i also add a scoop to my standard pizza dough recipe yum!

        there are recipes online for starting one yourself, but if you can find soemone who has an established one that will give you a piece of it that would be best. then you can just continue feeding it and using it from there. i think the older they are the better. mine's 60+ years old LOL

          no I dont know anyone who has a culture.. do you think a bakery would splice a peice for me?

            most are pretty protective of theirs as it is what makes their particular bread special. If you wre closer I'd give you some of mine to play with =]

              shame!- ah well, maybe I'll try a few bakery's all the same.. there are so many here, and most dont really have sour dough as any speciality...

                I'm working on a new starter, myself...

                On Friday night I took 1/2 tbsp. caraway seeds and put them in 1/2+1t water and let them soak over night
                yesterday I drained the seeds and mixed the caraway water with 1/2 C organic whole wheat flour. I left it out on the counter in a glass jar with some cheese cloth over the top of it.

                Today i'm going to add another 1/2 C flour and 1/2 C water to it and let it sit some more...

                but I forgot what the next steps are after that! when do I halve it, when do i feed it, etc. Once a day? and when is it good to use? when it's bubbly and stinky? or do I need to go further?

                I figure that it will take me a couple of more tries to get it right (this is attempt #2) but it'll be worth it.

                  Don't get stressed.

                  Just keep throwing half away and replenishing that amount with equal parts flour and water everyday (or twice a day if you prefer) until

                  1) You have plenty of foamy froth in your jar

                  and

                  2) It smells like funky old hooch

                  Once it's ready, you won't have any questions that it's ready, you'll be like "Whoa! That sh*t stinks! Woo hoo!" Don't get antsy it takes a week or more. There is a particular kind of bacteria that very often shows up around days three and four which can fool you. You'll look and think ok that must be what they're talking about when they say frothy. Just have have patience though, if it hasn't been a week, it may not be the right culture. If you just keep feeding it you can't really screw this up. As someone posted on another site about sourdough: People who believed the world was flat used to do this, so it can't be that hard!
